With a total prep time of about 10 minutes using ingredients that are easily kept on hand, this recipe is great in a time crunch—yet delivers gourmet flavor.

Goat cheese gives this spicy recipe a creamy twist. Combined with shrimp, a naturally low-fat protein source, Tofu Shirataki noodles keep the calories and carbohydrate counts incredibly low. Each 8 oz. pack of noodles contains only 20 calories.

The tofu noodles, made by House Foods, can be found in your refrigerated section of your local grocery store. These noodles are really filling and very tasty when sautéed and served as part of a recipe (don’t attempt to simply microwave them and eat them plain, they can be a bit slimy).

This recipe also works fine if you choose to substitute your favorite whole-wheat or gluten-free pasta.

Serves 1, but can easily be increased.

Options and Substitutions

I love the taste of goat cheese-a small amount packs a lot of creamy flavor-but for those who don’t care for goat cheese, substitute 1 T of cream cheese.

For a kid-friendly version, try substituting the large shrimp with small tail-off shrimp, and 1 T cream cheese for the goat cheese. If you kids don’t like spicy foods, omit the red pepper flakes.

Ingredients

6 oz large precooked shrimp, tail-on
1 (8 oz.) package Tofu Shirataki, Spaghetti shaped noodle substitute
¼ c low-sodium spaghetti sauce
½ t red pepper flakes (or to taste)
2 t soft goat cheese (crumbles can also be also be used)

Directions

Cut corner of bag containing the tofu noodles and drain. Place noodles in large skillet on medium heat. Rinse shrimp well, drain, and add them to the skillet.

Continue heating until shrimp and noodles are warm, about 5 minutes. Stir in spaghetti sauce and heat for about 2 minutes, until all contents of skillet are hot.

Turn off heat and stir in red pepper flakes and goat cheese. Continue stirring until cheese has melted and is evenly distributed throughout.
