Crunchy-Sweet Apple Scramble

With this recipe for Crunchy-Sweet Apple Scramble, caramel, cinnamon, and apples satisfy your sweet craving, while apple bits and toasted oats satisfy your craving for crunch. Use it to start your day, as a quick snack, or as a treat when you just need something sweet and crunchy.

As breakfast to start your kids’ day, they enjoy the sweet and warm apple taste while you’ll enjoy the fact that they are getting lean protein, fruit, and whole grains all at once. Add a little whipped topping and a touch of colored sprinkles and the kids will be asking for more.

Ingredients

¾ c liquid egg whites (or 4 egg whites)
2 T Torani Syrup, sugar-free caramel (or substitute 2 packets of Splenda Flavors for Coffee, Caramel)*
½ medium apple, skin on, cored and finely chopped
½ t cinnamon
2 t sugar-free apple butter (optional)
¼ c dried apple bits (try Gerber Graduates mini fruits or break either of these into small bits: Bare Fruit Apple Chips or Crispy Apples by Crispy Green)
2 T Cinnamon Toasted Oats (or substitute plain rolled oats)
2 T of your favorite whipped topping (optional)

* If you omit the Torani syrup or packets of Splenda for Coffee, substitute your favorite low-cal sweetener; agave nectar works well in this recipe for sweetness

Directions

Warm apple in microwave for 30 seconds.

Spray non-stick spray into an omelet pan and heat pan for 30-45 seconds. Add egg whites, Torani Syrup, apple and cinnamon. Scramble egg mixture until fully cooked.

Pour into small serving bowl and add apple butter. Mix to coat evenly. Sprinkle top with apple bits, and toasted oats. Serve immediately to retain crunch. If desired, serve with your favorite whipped topping.
