No Bake Peanut Butter Protein Bars

No Bake Peanut Butter Protein Bars

These protein bars are moist, creamy, and just plain dangerously yummy!

While most store-bought grocery bars are just half a step away from a candy bar, these bars are made from raw, unprocessed ingredients. You KNOW what goes into them when you make it yourself!

Made with no refined sugars or added junk—yet sweet and sticky—they are favorites for kids (who have no nut allergies).

The quick-burning carbs and the whey protein in this recipe make them a great post-workout recovery bar.

Wrap them individually and store them in the fridge  for a quick grab-and-go meal.

Ingredients

1 c (aprox. 10 large) Medjool dates, chopped
3 T no salt added peanut butter
4 scoops protein powder, vanilla
1 T cocoa powder
1 c rolled oats (not quick-cooking)
1 t vanilla
2 T agave nectar
¼ c plus 2 T liquid egg whites (these are pasteurized—safe for uncooked consumption)
¼ c walnuts, finely chopped

Directions

Mix all ingredients thoroughly, pressing them together with the back of a spoon until a large ball is formed. Press mixture into a 8×8 (or 6×9) baking pan.

Refrigerate for at least two hours. Cut into 12 bars or squares and wrap individually. You can store these in the refrigerator for up to one week. Serve cold or at room temperature.

*For more protein in your bar, add more protein powder and just enough water to allow the mixture to form a ball; about 2 t to 1 T of water for each scoop.
