Ice Cream Crêpes

Ice Cream Crepes

Ice Cream Crepes

Frozen deserts are always a hit with kids, even in the cold winter months. Here is a frozen desert idea to satisfy your need for a treat while avoiding adding any extra insulation (ahem, that would be fat) for those cold winter days.

These are also suitable for gluten-free diets.

Ingredients

Crepe and filling, that’s it!

..

Filling Ideas – choose one or more
½ c Lite or no-fat, whipped topping or sorbet
1 t Raw chocolate nibs*
½ t Colored sprinkles, optional

*Raw chocolate nibs can be hard to find; mini chocolate chips can be substituted. Chop them to spread out the chocolate flavor and crunch.

Makes 1 serving

Directions

Prepare crêpes and let fully cool. Distribute whipped topping in a line across the middle of the crêpe. If desired, add chocolate nibs and sprinkles (only on the ends where they will be visible). Freeze for one hour before serving.

To prepare chocolate filled ice cream crêpes, mix whipped topping with 1-2 t of cocoa powder and sweetener to taste. Prepare as above.
