Pardon My French Crepes

With an endless variety of fillings, crêpes can be a fun way to start the day for both adults and kids alike. They also make a nice warm snack, or, topped with a little lite whipped cream, a healthy desert option.

When prepared the traditional way with added sugars and fat, they can be super-fattening even though they are super-thin in appearance! Traditional crêpes average about 200 calories without toppings, with some being significantly higher (shame on you Bob Evans Restaurants – 459 calories for one plain crêpe!).

Here is a recipe for crêpes with less than 50 calories each that will make your mouth and your waistline say: “ooo-la-la“.

I’ve also provided a gluten-free option.

Ingredients

¾  c whole wheat flour or low-carb baking mix*
¼ c all purpose flour*
½ c liquid egg whites – or two egg whites slightly beaten
1 1/3 c non-fat milk**
Dash ground cinnamon
2 t granulated sweetener of your choice (optional)

* This recipe works really well with 1/2 c of Bob’s Red  Mill Gluten Free All Purpose Flour and 1/2 c of a standard all purpose flour. For a gluten-free option, replace all flour with buckwheat flour or a gluten-free flour such as Bob’s Red Mill .
** Or substitute 1/3 c non-fat milk powder and 1 c cold water

Filling Ideas
Your choice of chopped, fresh fruit for filling
Sugar-free jam, jelly, or preserves
Unsweetened apple sauce or apple butter
Lite whipped topping

Directions

Whisk all ingredients together to get out the big lumps; small lumps are OK. Let mixture stand for five minutes.

Thinly spray a 10 inch non-stick omelet pan and heat the pan on high. Once water droplets “dance” in the pan, add a small amount of crêpe mixture to coat the bottom of the pan, swirling it to distribute evenly.

Once the crêpe has a dry appearance and is beginning to curl up at the ends, it is ready to flip. Let the second side brown for about one minute and remove from heat. Spoon your filling inside and roll.

Makes approximately 10 crêpes.

    Can’t wait to try these! Thanks so much for providing a gluten free version. We are also dairy free so I will use a milk alternative. I’m making these this weekend!
