Turkey Meatballs and Meatloaf

Meatloaf and meatballs are one of those comfort foods where leftovers are the best part! Who doesn’t love a little cold meatloaf with a little (no-salt added) ketchup and some meatballs with marinara?

Scrambled turkey instead of beef is the way to go for making meatloaf and meatballs a tasty part of a clean diet. The turkey in this recipe provides a lean source of protein; oatmeal provides a healthy alternative to the bread crumbs used in other meatballs.

This recipe is quick and easy and makes both a good-sized meatloaf and about 10 meatballs. Cook once and live on leftovers!

Ingredients

2.5 lbs of ground turkey, extra lean
2 c quick oats
1 whole egg
¾ c liquid egg whites
½ c onion, diced
2 T no-salt seasoning blend (I used Ms. Dash Onion and Herb)
½ cup fresh pepper, diced*
¼ c no-salt added ketchup

*Substitutions include dehydrated veggies (such as one of the varieties from Just Tomatoes), or canned, no-salt-added diced tomato

Directions

Preheat oven to 375 degrees.

Mix all ingredients in a large bowl, reserving ½ c of the quick oats for the meatballs. It is easiest to use your hands to mix the ingredients.

Spray a glass loaf pan with non-stick cooking spray. Press the meat mixture into the loaf pan to fill the pan about three-quarters full.

Bake the meatloaf for 50-60 minutes. The cooking time will vary slightly depending upon if fresh or dehydrated veggies were used (with the longer time for fresh). Meatloaf should be browned on top and at the edges of the pan.

To make the meatballs, roll the remaining meat mixture into balls about 1 ½ inches wide in diameter. Roll each meatball in the remaining ½ c of quick oats.

Lightly spray a skillet with non-stick cooking spray. On medium heat, brown the sides of each meatball. Place in a baking dish lined with aluminum foil or parchment paper for easy clean up. Bake in 375 degree oven for 20-25 minutes.
