Here’s a recipe for chocolate frosting that is low in calories and fat, and packs in antioxidants from cocoa powder. It tastes really good and oh so chocolatey.

It is kid-friendly too—as proof, my daughter ate the icing and left the cupcake alone (like usual). Ah, life is good!

You’ve probably heard that consuming dark chocolate is good for you. Unfortunately, this does not mean you should go out and eat a chocolate candy bar (rats!); chocolate bars contain too much fat and processed sugar to justify eating them for antioxidants.

Cocoa solids contain the antioxidants you’ve heard about, but once processed they lose much of their antioxidants. Raw chocolate nibs and “undutched” cocoa powder (cocoa powder that is not processed with alkali) are the best ways to get your antioxidants from chocolate.

This recipe is sweetened with raw agave nectar, a natural sweetener now available at most grocery stores and any health food store. It comes from the blue agave cactus, tastes similar to honey, and because it is low on the glycemic index it keeps blood sugar levels even.

Use this frosting on your favorite low cal cake, brownies, or inside a crêpe for a quick dessert. Thin it slightly with additional water and dip strawberries in it. Or—since it contains about half the calories of any store-bought frosting and virtually fat-free—eat it right off the spoon to clobber that chocolate monkey on your back!

Ingredients

  • 1 C Non-Fat Milk Powder
  • 4 T Cocoa Powder, unsweetened, undutched
  • ½ T Cinnamon, ground
  • 1 T Instant Coffee Crystals
  • 3 T Raw Agave Nectar
  • ½ T Vanilla Extract
  • 3 T Boiling Water, plus additional hot water as needed

Optional Add ins

  • Raw Chocoloate Nibs
  • Unsweetened Coconut, grated or shredded

Makes approximately 5 servings, 2 T each.

Low-Carb: as prepared
Low Sodium: as prepared
Lower Calorie and Carbohydrate Option: To decrease calories to 61 and decrease carbs to 11g, substitute Splenda (or another no/low calorie granulated sweetener) for the agave nectar and increase the amount of water to ¼ cup.

Directions

Mix dry ingredients in a small mixing bowl.

In a small saucepan, bring liquid ingredients to a boil. Pour into the mixing bowl with the dry ingredients and mix thoroughly. Add additional hot water to thin the mixture as needed, one teaspoon at a time.
