Like many parents, getting my kids to eat fruit can be a chore. The recipe for this snack “appeared” on my computer one day, with a note from a fairy and it got its name at our house: Fairy Food.

When this fruit mix is served in a fancy glass, my daughter will eat all the fruit to discover the surprise at the bottom. The surprise can absorb the juice and nectar, making it a yummy finale to a healthy dish. It can be used as a quick snack, desert, or side.

Now that the fruit has a magical twist, she gobbles it up… at least until she turns nine and stops believing in fairies maybe…

Ingredients

  • 1 c Fresh Pineapple, cut into chunks*
  • 1 t Agave Nectar
  • 1 ½ T Grated Coconut, unsweetened
  • 2 T Light Whipped topping (optional)

* To make this into an ultra-quick snack, use two fruit cups of pineapple in its own juice

Surprise Options (for the bottom of the cup)
2 T Banana Gerber Graduates Mini Fruits
3 Joseph’s Sugar-Free Coconut Cookies
½ sheet of low-fat graham cracker, crushed or broken into chunks
2 T low-sugar breakfast cereal, such as Honeycombs or Alphabits
1 T mini chocolate chips or semi-sweet M&Ms for baking

Makes 1 serving.

Directions

Choose a surprise and line bottom of fancy glass or wineglass it.

In a separate bowl, mix the pineapple, nectar, and coconut. Spoon it over the surprise. If desired, top with light whipped topping. Serve with a smile.
